Camping Fun! A meal plan for you!

How do you plan your meals for camping? I don’t know about any of you, but I always make a meal plan. As much as I love having hotdogs and hamburgers… I need variety!

So here’s the plan:

Day 1 dinner (we never arrive in the morning):
Hot dogs
Veggies and dip

Day 2 breakfast:
Cereal, oatmeal, and fruit

Day 2 Lunch:
Grilled cheese with tomato and ham
Veggies and fruit

Day 2 Supper:                                                                                                                                   Black Forest Ham and Back Bacon potato packets w corn and onions (1 packet per person)

  • butter a large piece of aluminum foil
  • put down a layer of sliced potatoes and add salt and steak seasoning
  • add a layer of sliced onions, sliced ham and back bacon, and corn
  • top with cheese, if desired
  • wrap and seal in aluminum foil
  • add another layer of aluminum foil and cook over hot coals on the grill
  • Flip over packet every few minutes and keep off direct flame
  • Takes about 25-35 minutes dependent on thickness of potato

Day 3 Breakfast:
Pancakes and fruit

Day 3 Lunch:
Beans and wieners
Veggies/fruit

Day 3 Supper:
Steaks
Baked potatoes (make extra for homemade hashbrowns on day 5)
Tomato/cucumber salad for 4 (recipe follows)

  • Dice one cucumber and 2 tomatoes
  • Add sliced olives and some diced purple onions or sliced green onions
  • Crumble feta cheese over top and drizzle over a vinaigrette (purchase one or try this one here)

Day 4 Breakfast:
Cinnamon Raisin French toast and fruit (use cinnamon raisin bread, instead of regular bread)

Day 4 Lunch:
Smokies w fruit/veggies

Day 4 Supper:
Quesadillas with rice (Quesadilla recipe below, I always purchase a rice mix that you can make in a pot)
Tossed salad (I always purchase a kit)

  • Take a tortilla wrap and place in cast iron pan
  • On one half of the tortilla add shredded cheese, pre-cooked sliced chicken breast, sliced green onions, tomatoes, green peppers, seasoning salt, pepper
  • Grill over the fire until the cheese is melted and the tortilla is browned
  • Fold the empty half over the “full” half and slice into four pieces
  • Serve with sour cream and salsa

Day 5 Breakfast (the big breakfast before we go home):
Eggs, any style with bacon, sausage, and homemade hash browns (recipe follows)

  • I always bake extra potatoes from the “Day 3 baked potato dinner” to use in this recipe
  • Dice pre-baked potatoes and sauté in butter
  • Toss in diced white onions or sliced green peppers
  • Add seasoning salt and pepper
  • Continue cooking until the potatoes are nicely browned

Tips:

  • Pre-cook stuff like chicken prior to trip
  • Prep all cut up fruits and veggies and dips
